Abrasa Viva — Argentine Asado

A live-fire asado experience with its own identity, led by Martín Vallesi and his team. The asadores cook in front of guests around the fogón beside the centuries-old aguaribay tree, explaining the cuts, the fire and the timing. Empanadas from the clay oven to begin, a full Argentine asado with grilled vegetables, and dessert. Available in Spanish or English.

Vallesi Malbec Tasting

Taste the estate's own Vallesi Malbec beside the vineyard the grapes come from — a small-scale wine of roughly 2,000 bottles a year, served in the restaurant and sold only here.

Olive

Olive Oil Tasting in the Grove

A tasting of the estate's single-varietal Arauco extra-virgin olive oil, pressed from the historic 1890 grove — served with bread, in the grove where the olives grow.

Wine

Vallesi Malbec

A small-scale estate Malbec — roughly 2,000 bottles a year — from the family's own vineyard, planted in the 2000s on the same land where guests stay. Served in the restaurant and sold only at the estate. Its label reproduces an original musical manuscript linked to the Virgen de la Carrodilla, honouring Maestro José Felipe Vallesi.

Olive Oil

Verde Oliva Extra-Virgin Olive Oil — Arauco

A single-varietal extra-virgin olive oil pressed from Arauco olives grown in the estate's historic grove, planted by Ángel Cavagnaro in 1890. Small-scale and unblended with any external oil. The grove is an active productive unit and a physical record of the property's history.

Cosmetics

Olivotherapy Cosmetics

An olive-based cosmetics line developed from the estate's own olive oil. Used in the room amenities and in the estate's olive-therapy massages, and available to purchase at reception.
